September’s Rally for Tomorrow Sustainability Summit at Rule of Thirds in Brooklyn, New York, was a remarkable event that brought together leading sustainability authorities from across the hospitality industry. The full day of festivities featured engaging panel discussions and renowned guest speakers, giving attendees insight into what today’s top change-makers are doing to reduce waste, source responsibly and otherwise contribute to a more sustainable future.
Welcome Remarks
The event kicked off with a warm welcome from Another Round Another Rally Co-Founder and CEO Amanda Gunderson and Camilla Guiguer, the director of sustainability and responsibility for Pernod Ricard in North America.
Keynote Speaker
Next, attendees heard from Keynote Speaker Haresh Bhojwani, the one-time Deputy Director of Columbia University’s International Research Institute for Climate and Society and the founding partner and master distiller at Peru’s Destilería. Haresh is among the globe’s leading authorities on environmental conservation and sustainability, and he inspired and engaged a captive audience with his words about how climate science, environmental conservation and sustainable business practices intersect.
Fermentation Workshop
Guests also enjoyed a Fermentation workshop and demonstration guided by Kelsey Rammage, the founder and director of Trash Collective, a bartender sustainability and cocktail consultancy. The engaging session gave participants a chance to learn innovative approaches to sustainable bartending, putting a unique spin on the day’s agenda.
Problem Solving Panel
Amanda then introduced the event’s problem-solving panel featuring some of the globe’s foremost leaders on sustainability and eco-friendly business practices. Their innovative approaches, forward-thinking strategies and dedication to preserving the planet have driven positive change within their own bar and restaurant businesses – and helped set remarkable examples for the rest of the world to follow.
Before concluding, event organizers reminded the crowd of an announcement they’d made earlier in the day: there’s a new, $50,000 grant opportunity up for grabs for an eco-friendly bar or restaurant owner, and attendees were the first to hear about it, giving them a head start on the competition.
